I've got a spare set of 15-16 original wheels. I'm thinking about putting R compounds on them for track time. Would they hold better than my 17-18's with S-03's ? The 17-18 combo is lightyears better than 15-16 but will R's bridge the gap?

depends on what kind of R compound tires you used, even RA1 will be better than So3, so in case you are getting something better, you'll be fine.
I recommend you get the 25mm spacers front and back, it does help the grip a bit.
