Nick - got the Fedex package today. The wood case and its contents look so nice. You really shouldn't have. :biggrin:

I forgot what you told me about Texas BBQ methods. Can you refresh my memory on the right way to BBQ? I'm probably going to get ribs, and slabs of meat.

Need suggestions from the other Texans also on the right way to barbeque, Texas style!! :biggrin: :biggrin:

I need some insights about smoking meats, the bbq kinds... (non-pork, due to my faith).

My tip of the day: good, quality charcoal preferable over gas/propane grill... build-up intense broiler-like heat (think steel blast furnace!!!) BEFORE you add your meats (ie. non-seafood, deli, etc.) to seal in the juices. Marinate the meats well in advance, slightly chilled.
