Has anyone tried repairing the carbon engine cover that has yellowed? I saw that people were able to sand down yellowing carbon and get it a new clear coat to get the yellow out.

I haven't done the specific part you are describing. However it's a very easy repair. Wet sandpaper the gelcoat smooth you can then put a coat of automotive clear over the top for future protection. Or just polish it up with a random orbital and some compound. I put a clear coat on the parts so it doesn't happen again.
