All oils thin out as they get hotter and thicken as they cool.  The difference between a 30 and 40 weight oil is very little.  Looking at the High Temp Sheer (HTHS) of the oil is also a good indicator of the oil's performance at very high temps.

For track use, a 0 or 5W 30 or 40 is a good ballpark.
