Thats a pretty good question. I have no experience with them but I know Leroy's does a lot of very nice stuff. I had the same question a while back and asked some of the local hot rod'rs with some very nice cars, who they would suggest. They gave me two shops they would recommend, I will try to find the card they gave me. Can't promise anything though... its been a while
