I have been trying to come up with a way to store my phone while driving. I have the iPhone XS Max which is larger than the traditional iPhone. It is big enough where once the cable is connected will not fit in the cubby hole next to the rear armrest compartment. If you push it down you risk bending the connection. So the other day I found the following connector. It is a U-Shaped connector. It allows the phone to completely lay in that depression area. For what it is worth... https://www.amazon.com/s?k=Phone+Ch...+iPhone+iPod,+iPad,+IOS11+More&ref=nb_sb_noss

I have and 11 Pro and had the same problem. I couldn't find a decent phone holder or a good place to mount one. I hate mounting stuff on the windshield. The best solution was to use one of those phone holders that fit in cup holder with the adjustable goose neck. Granted, I'm usually in the car by myself and only need 1 cup to be held. I like using the main infotainment screen for GSP via carplay, but keep the phone screen on whatever music app I'm using at the time. Basically, have 2 screens side by side, to save on time for switching between apps on the main screen. You can also get a version of this holder that wireless charges your phone but then you loose the better quality sound from the wired connection.
