I've checked clutches this way on many "beater" manual shift cars i've had. It is abusive and you shouldn't do it too often.
1. Put the car in a high gear like 4th or 5th.
2. Rev it up to about 4K
3. Let the clutch out sharply and give it moderate throttle.
With a good clutch, the rpm's should fall quickly even with some throttle. You don't have to let it slip long to "feel" if its good. In fact, its BAD to let it slip long this way.
If the clutch is weak or mis adjusted, the rpm's will not fall quckly and the slip will be more pronounced.
If the clutch is shot, the engine will easily overcome the clutch and the revs will easily increase with throttle. At this stage, the clutch is pretty much done..
Thats my method. It has worked well for me, but it is abusive to the clutch if you do it too often or too long. Do NOT let it slip long enough to produce smell or smoke.
