How do I remove the OEM phone?

Two major components are the phone set in the glove box and reciever set in the trunk. The base unscrews in the glove box, and can be removed by removing the cord that goes under the box. The trunk reciever unbolts. Remove the DIN cord that goes to the reciever around the trunk. I believe you'll then have the components that were added for the phone.
The earlier cars were pre-wired for the phones with a DIN cable that runs from the rear firewall into the cabin.
